Spicy Prawn Salad
Salad Ingredients
- 1 Head of Romaine Lettuce chopped
- 1 Head of Butter Lettuce chopped
- 2 cups of chopped Spinach
- Green Beans cut Julienne style cut thin
- Mini Heirloom Tomatoes cut in half
- Sunflower Sprouts
- Persian Cucumbers cut in chunks
- Red Anaheim Peppers sliced thin
- Fresh Dill chopped
- Fresh Cilantro chopped
- Fresh Basil chopped thin
Vinaigrette Ingredients
- 1 Fresh Lime Juice
- 1/4 Cup of Olive Oil
- 1/4 Cup of Balsamic Vinegar
- Sea Salt to taste
Herbed Prawn Ingredients
- 12 Jumbo Prawns (if you are vegan you can substitute prawns for Avocado and put the seasoning in the salad)
- 1 Tsp of Turmeric
- 1 Tsp. of Thyme
- 1 Tsp. of Chipotle Powder
- 1 Tsp of dried Oregano
- 1 Tsp. of Cumin
- 2 Tbs. of Grape seed Oil
- 1 tsp. of Sea SaltMean
Method
Combine ingredients for vinaigrette and set aside
Toss salad ingredients and refrigerate
Pre-heat a 10” skillet for two minutes
Add the prawns, cook for 5 minutes on each side
Cook, covered, for two minutes
Toss salad with dressing, top with prawns or serve on the side
