Nena's Delicious Quinoa Patties in Yellow Tomato Sauce
Quinoa Patties
Ingredients
- 1 cup of cooked quinoa
- 1 zucchini
- ¼ medium onion
- 1 carrot
- 2 fresh sage leaves
- 2 small branches of thyme
- Salt to taste
- 1 leek (white part only)
- ½ teaspoon of lemon pepper
Preparation
- Cut the carrot and zucchini into medium pieces. Pulse in food processor until finely chopped.
- Add the rest of the ingredients to the food processor. Pulse a few times to ensure it's well blended.
- Roll the mixture into balls, then press into patties.
- Heat the grape seed oil in a skillet and cook the patties on both sides until golden brown.
Yellow Tomato Sauce
Ingredients
- 2 medium yellow tomatos, chopped
- ½ onion, chopped
- 2 garlic cloves, chopped
- 1 teaspoon of grape seed oil
- Salt to taste
- 1 teaspoon Mexican seasoning
Method
- Heat a saucepan, add oil, tomatoes, onions, and garlic. Stir well.
- Cook approximately 8 minutes.
- Transfer to a blender and blend until smooth.
Ladle the sauce over the patties and enjoy! It's gorgeous and tasty garnished with micro greens or arugula.
