Nena's Delicious Quinoa Patties in Yellow Tomato Sauce

Quinoa Patties

Ingredients

  • 1 cup of cooked quinoa
  • 1 zucchini
  • ¼ medium onion                  
  • 1 carrot
  • 2 fresh sage leaves
  • 2 small branches of thyme
  • Salt to taste
  • 1 leek (white part only)
  • ½ teaspoon of lemon pepper

Preparation

  • Cut the carrot and zucchini into medium pieces.  Pulse in food processor until finely chopped.
  • Add the rest of the ingredients to the food processor. Pulse a few times to ensure it's well blended.
  • Roll the mixture into balls, then press into patties. 
  • Heat the grape seed oil in a skillet and cook the patties on both sides until golden brown.

Yellow Tomato Sauce

Ingredients

  • 2 medium yellow tomatos, chopped
  • ½ onion, chopped
  • 2 garlic cloves, chopped
  • 1 teaspoon of grape seed oil
  • Salt to taste                               
  • 1 teaspoon Mexican seasoning

Method

  • Heat a saucepan, add oil, tomatoes, onions, and garlic.  Stir well.
  • Cook approximately 8 minutes.
  • Transfer to a blender and blend until smooth.

Ladle the sauce over the patties and enjoy! It's gorgeous and tasty garnished with micro greens or arugula.
