Nena's Cauliflower Soup
Ingredients
- ½ of a small cauliflower
- 1 medium-sized zucchini
- ½ of a yellow onion
- 3 garlic cloves
- 1 cup of raw almond milk
- 1tsp of *Herbamare Seasoning
- 1tsp of Spice Hunter Mexican Seasoning
- 1 /2 cup of water
Instructions
- Pull apart the cauliflower and wash thoroughly.
- Roughly chop the onion.
- Cut garlic in half.
- Slice zucchini in quarters.
- In a medium pot add all of the ingredients and cook over medium heat for approximately 10 minutes. When the cauliflower and zucchini are tender without being over-cooked, transfer them into a blender and blend until smooth. Add more water or almond milk if you prefer it a bit thinner.
